I learned about iptables and general Linux security from this book "Linux Server Security" (copies available in the national library). I think it's a good book, lots of useful info in it.
Heard of the shorewall script, haven't tried it tho.
Other scripts and programs worth mentioning:
Bastille (http://www.bastille-linux.org)
User friendly perl script that helps users configure Linux security through a Q&A style. One of the modules deal with firewalls.
Port scanners (nmap , Nessus)
After you've set up your firewall, you might want to use a port scanner to check for any weaknesses (open ports etc) in your system. The book contains info on how to use them.
